Recipe: Spicy Lentil Soup

Here's a warm and spicy soup from Christine Cushing's show on Food TV, Christine Cushing Live. Lentils provide a great source of minerals and soluble fibre, and they cook up in no time!

Spicy Lentil Soup

3 T. extra-virgin olive oil
1 large onion, chopped

4 cloves garlic, sliced lengthwise

1/2 tsp. cumin seeds
1/2 cup green lentils
1/2 cup red lentils
1 small dried chili, crushed
2 carrots, diced
2 stalks celery, diced
2 bay leaves
Sea salt and pepper, to taste
1 T. red wine vinegar
6 cups vegetable stock

In a saucepan, sauté the onions in oil on medium heat until golden.  Add the sliced garlic and cumin seeds, and continue to cook for 2-3 minutes more, until garlic is golden. 

Add remaining ingredients except for vinegar, and bring to a boil.  Cover and reduce heat to low.  Simmer, covered, for 30 minutes. 

Uncover and simmer for 10-15 minutes more, or until lentils are tender. Adjust seasoning and add the vinegar.  Makes 4 servings.
