Roasted Red Pepper Salad:  

This recipe, from the Dieticians of Canada website, offers an easy and healthy salad that's perfect for no-fuss summer meals. 

6 roasted red bell peppers (roast yourself, or use jarred), each cut in 6 strips
1 T. balsamic or red wine vinegar
2 tsp. extra virgin olive oil
2 T. chopped fresh basil

Freshly ground black pepper, to taste

Arrange peppers on a serving dish. Set aside.

In a small bowl, combine the vinegar, olive oil, basil, and pepper.  Drizzle over the peppers.

Chill at least one hour before serving.  Makes 6 servings.
