Recipe from Ricki's Kitchen: Raw Raisin-Apricot Bars: These fabulous, rather addictive dessert bars are a great introduction for those who haven't tried raw or living foods and want a delicious, easy dessert. For those of you already enamored of raw, you'll quickly add these to your list of favourite treats! Bars:
1/2 cup raisins,
soaked in pure water 4-6 hours and drained Frosting: 1/2 cup dried dates,
soaked in pure water 4-6 hours
and drained For the bars: in a
food processor, process nuts briefly to chop. Add raisins, apricots, and
orange rind and process until mixture pulls away from sides of bowl (it
will be like a dough with crumbs of nuts in it). Add coconut and
pulse just to mix. Pat into a 9x9" pan and refrigerate while making
icing. For the frosting: blend
dates, coconut butter, and vanilla in a blender until perfectly smooth
and no pieces of date remain. (You will need to push contents toward
blades repeatedly and add a little date water if necessary to get a
smooth paste). Spread over base in pan and refrigerate until set. Cut
in small squares and INDULGE!
