Recipe from Ricki's Kitchen:

Pomegranate, Orange, Papaya and Kiwi Green Salad
adapted from the Pomegranate Council website

Dressing:

1-1/2 tsp. white wine vinegar
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. crushed red pepper flakes
1/4 cup extra virgin olive oil

Salad:

6 cups mixed baby greens
2 medium ripe papayas, peeled and sliced
4 kiwis, peeled and sliced
Seeds from 1 medium pomegranate (about 3/4 cup)

Make dressing:  Combine vinegar, salt, pepper, and red pepper flakes; whisk in oil. 

Assemble salad: Toss greens with 2 tablespoons of dressing and arrange on a serving platter. 

Alternate orange, papaya and kiwi sliced over greens.  Drizzle with remaining dressing and sprinkle with pomegranate seeds.

Makes 6 servings.
