Perfect Pecan Cookies

These magical, delicious cookies are vegan, flourless, and without added sweetener or fat.  And with only 4 ingredients, they’re also super-easy!

2 cups raw pecans

grated peel of one organic orange

1 cup pitted dates (they should be soft)

1 cup shredded unsweetened coconut

Bring a small pot of water to a boil and add the dates.  Let soak for 15 minutes.  Drain and set aside.

Preheat oven to 325 F.  Lightly grease a cookie sheet.

In a food processor, process the pecans and orange rind until coarsely chopped. Add the drained dates and process until a dough-like consistency is achieved (mixture will start to pull away from the sides of the processor). Add the coconut and pulse a few times to combine. 

Remove the processor blade and, using your hands, roll dough into 2-inch balls.  Place on cookie sheet and press down with your fingers or the back of a drinking glass to form round cookies about 1 inch thick. (If dough is too sticky to handle, rinse hands under cold water for a second or two before rolling the cookies).

Bake for 10-12 minutes, until the bottoms are lightly browned.  Cool completely before removing from cookie sheets.   Makes about one dozen.
