Dandelion Soup

Dandelion is a great cleanser and detoxifier.  It also promotes good digestion and liver function.  This soup is a wonderful way to enjoy this underrated green! 

4-5 cups homemade vegetable or chicken broth

1/4 cup fresh parsley, chopped

1 large carrot, sliced in rounds

2 tsp. fresh grated ginger root

1/2 cup sliced mushrooms

1/2 cup snow peas or shelled edamame (fresh soybeans)

3 cups packed dandelion greens, cleaned and chopped

2/3 cup medium tofu, diced

2 green onions, sliced

1 T. tamari or soy sauce

Bring broth to a simmer in a large pot and add the parsley, carrot, ginger, and mushrooms.  Simmer until carrots are almost tender.  Add remaining ingredients and simmer to heat through, just until greens are wilted.  Serve immediately. Makes about 4 servings.
